When importing a Word 2000 document, numbers that used to be document variables
are converted to plain text, and therefore no longer updated. See attached file
for an example.

This is a major issue for us; document variables are vital to release cycles.

These kind of document variables custom document properties) are not
supported in OOo at the moment.

No, these are custom "document properties", issue 9554 is "document
variables". We have the standard properties available for display with
fields from insert->fields->docinformation. e.g. created, editing
time, modified etc. But what we don't have in OOo in general is the
ability to have more than the 4 custom document properties. That idea
needs to be extended to make the existing "info 1/2/3/4" into a more
general thing with differnt names for unlimited numbers of properties.
Something you can do in ole2 formats in general (.doc/.xls/.ppt) with
file->properties->custom inside e.g. msword.

These properties are stored in a ole2 stream called
DocumentSummaryInformation which is a very similiar (maybe the same)
format as the SummaryInformation stream which both msoffice and the
older 5.2 binary format contain.
