When the date field is inserted into the Header (Insert->Fields->Date), it does 
not update itself automatically. So, if I insert the date today, open the 
document tomorrow, and print it, today's date will appear in the header instead 
of tomorrow's.

-> j_k9 : this is the normal behaviour in OpenOffice.org. By default the date is
fixed when inserted in a doc. If you want a date that changes when the day
changes, you have to double-click on the inserted date and select "date" instead
of "date (fixed)".

So this issue should be closed as it is not a bug.

pagalmes - Thank you - that works. 

The default behaviour is quite odd though, and non-intuitive - the OO.org 
developers might consider changing the default to "Date" instead of "Date 
(fixed)"?

Their must be one default. In this case, the fixed date as default makes sense
when writing a letter. One doesn't want to have the original date changed each
time one opens the file.

That is true... But others put the date field there so that it will print with 
the correct date, no matter when the field was added. It is a bit tedious to 
have to change this every time.

You might want to consider adding this as a section in the Options panel? That 
way, each user can set the default type for each field, instead of having to 
correct the format manually each time they use it..

Yes maybe adding a check-box could be interresting.

es -> what do you think ? Maybe something for the specs ?

I don't think so.
This is a typical case. For each default that exist 50% of the users wish it
like this, the other 50% like that. The only way to make everybody happy is to
set an option "this or that". An option that approx. 0.0001% will really use.
We have already to many options and we have to restrict them to very special cases.
Plus, the Fields dialog is not a black box. It costs only 1 click while
inserting the date to switch to variable. No need of an option for this.
