It's more a marketing, PR issue than a technical one:

OpenOffice schould not hide itself in esported PDF files.
It should fill in correctly all Data that appears in the document summary in
Acrobat Reader

some fields (creator, producer) are useful for marketing/evangelism
(this is important, a kind of self promotion) and others (created,
modified) are useful in day to day usage

I exported some files to pdf and the summary shows: 
Producer: OpenOffice.org 1.1.0...
