For newer linux distributions, there would be much better quality and simpler
operation if OpenOffice had the option of relying on xft for font support.
Perhaps this is already in there, but I can't figure out how to use it. Where
can I learn more about this?

sorry but
1. this is not a "Windows 2000" issue as stated in the header
2. this isn't a support forum either. Pls check the NGs OOo_discuss or
whatever.
3. OOo uses FreeType

As mentioned on the qa dev list on March 5th I will close all resolved
<wontfix/duplicate/worksforme/invalid> issues. Please see this posting for
